The most delicious Chicken recipe you will taste!
Chicken Francese is easy to cook, requires only a few ingredients, and tastes fantastic. One of the greatest chicken dishes you'll ever have, and worthy of any fine dining establishment.

What is Chicken Francaise ?
Chicken Francaise, also referred as chicken Francese, is thought to have been invented in America by Italian immigrants. Who knows why an American Italian meal is dubbed "French," maybe it's because of the butter's richness, maybe it's because of the wine sauce's flavour, who knows, but one thing is certain: the flavours are fantastic!

How to Make Chicken Francaise ?

  • 2 chicken breasts
  • Half cup plain flour
  • 2 eggs
  • Handful of fresh parsley
  • 50g  Parmesan cheese
  • 1 Cup White Wine
  • 1 Cup chicken stock
  • 1 garlic clove
  • 4 tablespoons olive oil
  • 4 tablespoons butter
  • Half lemon
  • Salt and pepper

  • In a large enough dish to hold the chicken breast, crack the eggs. Season eggs with salt and pepper and lightly beat them.
  • Finely chop the parsley (save a few sprigs for garnish) and stir half of it into the egg mixture.
  • Finely grated Parmesan cheese should be added to the egg mixture and thoroughly mixed. Remove from the equation.
  • If there is any skin on the bird, remove it before butterfly cutting the breast. Hold a long sharp knife along the thicker part of the breast, position your palm on top, and cut almost all the way through the breast. Open the breast like a book by cutting parallel to your cutting board.
  • Put wrapping paper on a cutting board, open your breast spread, sandwich it in plastic wrap, and flatten the thicker side with a flesh mallet or the underside of a saucepan.
  • Prepare your parts of wine and chicken stock.
  • Pour the plain flour onto a dish and shake it to spread it out flat.
  • Place the garlic in a garlic press after peeling it (or chop finely).
  • Add the olive oil and half of the butter to a frying pan over medium heat.
  • Shake off any excess flour after coating the chicken in flour.
  • Place the chicken in heated oil after dipping it in the egg wash and making sure it's completely covered.
  • Cook the chicken for 4 minutes on each side. After the first side has browned, flip it over and cook the second side. Place the chicken on a heated plate to rest.
  • Add the white wine to the same frying pan over high heat (alcohol can catch fire so be careful, turn off heat). Add the chicken stock to the pot. Add the garlic cloves that have been smashed. Half a lemon should be squeezed in. Allow to reduce for 2 minutes over high heat.
  • Mix the other half of the chopped parsley. On low heat, add the remaining butter and whisk until it is melted.
  • Return the chicken to the sauce and heat it for no more than 30 seconds on low heat.
  • Serve the chicken on warm plates with parsley on top.
